Banana Walnut Cake with Caramel Meringue Buttercream




    Assalamualaikum dan selamat petang semua... Petang ni aku nak update N3 yang tertungak. Dah 3 4 hari aku buat kek ni... Memang sedap baq hang... Sebenarnya aku dah lama teringin nak buat ket yang naked ni. Bukan bogel lucah tau... No, no, nooo... Naked tu maksudnya tak letak krim seluruh kek tu. Cuma letak bahagian tengah atau inti kek dan kat atasnya saja... Yang tepi tu biarkan kosong. Bila tengok kat instagram banyak orang dok tayang kek macam ni... Dah jadi macam satu fenomena jugak laa.. Aku pun teringin jugak nak cuba... Cari punya cari kat google jumpa la resepi ni... Lagi pun aku teringin nak belajar buat meringue buttercream. Dulu dah pernah cuba, tapi tak menjadi. Alhamdulillah kali ni menjadi. Ok la, jom kita tengok resepi kek ni...


 


Banana Walnut Cake with Caramel Meringue Buttercream

Banana Walnut Cake
original recipe: Kitchen guardian

(A)
250g unsalted butter-melted n cooled
180g castor sugar(the original recipe is using 250g)
2tsp vanilla essence

(B)
4 large eggs(grade A)

(C)
4 large ripe banana-mashed

(D)-sift
350g all purpose flour
4 tsp baking powder
1 tsp baking soda
a pinch of salt

(E)
6 tbsp buttermilk/yogurt
handful of roasted chopped walnuts


How to:
  1. Mix (A) till well incorporated and add egg one at a time
  2. Add mashed Banana
  3. Add (D) in 3 additions
  4. Lastly add (E)-pour into two greased 8" round pans
  5. Bake in a preheated oven 160C for 40 to 45 mins





Caramel Sauce
original recipe: Sarah Jasmine

1/2 cup sugar
1 cup whiping creame


how:
  1. melt the sugar
  2. when sugar has melt and has turn to amber colour-turn off the heat
  3. pour cream bit by bit and stir till all incorporated
  4. put back the pan on the stove and let the caramel simmer a little bit-remove from the heat
  5. let it cool and pour into container and refrigerated.






Caramel Meringue Buttercream
Original Recipe: Sonia -Nasi Lemak Lover

100g white egg
135g castor sugar
227g unsalted butter-anchor-cut into small pieces-but let it cooled
1/2 quantity of caramel sauce
1 tsp vanilla essence


How :
  1. combine the egg whites,sugar in the heatproff bowl of a standing mixer set over a pan of simmering water
  2. whisk canstantly by hand until mixture is warm to the touch and sugar has dissolved(the mixture should feel completely smooth when rubbeb btwn your finger)
  3. Attach the bowl to the mixer fitted with whisk attachment-with medium to high speed-whisk until stiff and fluffy and glossy-kalau nak test ok ke tak- sentuh mangkuk akan rasa sejuk...
  4. with lower speed add butter one at at time,mixing well after each addition-once all butter has been added,whisk in vanilla and caramel.
  5. switch to paddle attachment-and continue beating on low speed until all air bubbles are eliminaated,about 2 minutes-continue beating until the frosting is completely smooth.






How to assemble the cake:

  1. cut the cake into 4 layers
  2. spread the buttercream on the 1st layer of cake then drizzle the caramel sauce then top it with 2nd layer of cake-repeat the same process till the 4th layer of cake

Salam alaykum..a very nice cake n am sure it tastes as good as it looks..sy nk tny berkaitan meringue buttrcream..what if kalau sy cuma ada hand mixer but not a stand mixer ye?it is still okay to make the buttercream?sebab sy ade tgok vdeo, n the baker changed dr whisk to paddle..so kalau sy xde, n just pkai hand mixer dr awal smpai akhir, is it gonna change appearance ke consistency buttercream tu?tq so much in advance for ur respond!
