Assalamualaikum semua... Apa habaq...? Lama tak mai jenguk blog aku ni... Sekarang ni kan tengah panas dengan penyakit covid. Nak kelur pi mana-mana pun takut... So, kalau tak da hal penting baik dok rumah ja... Bila dok rumah tu kalau tak tau nak buat apa boleh la cuba dessert yang tengah hot sekarang ni... Kalau nak ikutkan aku nak buat versi cheesecake tu... Tapi rasa tak berapa rajin aku buat versi dalam gelas ni... Senang nak makan, tak yah nak potong-potong. Nak dapatkan biskut biscoff & biscoff spread ni punya la susah. Harga dia pun boleh tahan mahal... Biskut dia tu bagi aku agak manis. Kalau nak makan macam tu ja elok minum dengan teh o kosong tanpa gula... Biskut ni dia rasa macam karamel & ada bau kulit kayu manis.. Aku tak berapa minat.. Tapi sebab benda tengah viral ni apa salahnya kita cuba... Lepas ni aku nak cuba versi cheesecake pulak... Kalau ada yang nak mencuba, boleh tengok resepi kat bawah tu... Byee...
Speculoos Cheesecake Shots

Ingredients
The Base
3 oz speculoos biscuits ( lotus biscoff biscuits ) ( 85gm )
The Filling
7 oz full fat cream cheese ( 200gm )
½ cup cookie butter ( lotus biscoff spread ) ( 125gm )
1 tsp vanilla extract
⅓ cup whipping cream, min 35% fat ( 80ml )
½ cup cookie butter ( lotus biscoff spread ) ( 125gm )

Topping
some whipped cream
some crushed speculoos biscuits
some cookie butter , warm it slightly to make it runnier

Instructions
The Base
- Place biscuits in a bag and crush them into pieces using a rolling pin.
- Spoon around 3-4 tsp into 4 glasses. Set aside.
The Filling
- Add cream cheese into a bowl and using an electric mixer, whisk it until fluffy. Then add in cookie butter with vanilla extract and mix everything well. Set aside.
- In another bowl, add in whipping cream and whisk it until soft peaks. Add whipped cream into cream cheese mixture and gently fold everything together until well combined.
- Divide evenly into the 4 glasses. I used a piping bag to make it easier. Chill in the fridge for minimum 2 hours.
Before serving, pipe some whipped cream on top and then sprinkle some crushed speculoos biscuits. Lastly drizzle some cookie butter and serve!
